31 Days of Halloween 2015 - Day 9: Pumpkin Spice Roll-Outs


Ah, Autumn.  The season of pumpkin spice EVERYTHING.  But have you taken a look at most pumpkin spice food items?  A lot of them don't even have pumpkin in them, which I'll be honest, kind of freaks me out.

I first tried a batch of pumpkin spice roll outs using Lorann's pumpkin spice emulsion.  Don't get me wrong - it worked fine.  But it just didn't taste all that much like pumpkin spice, and again, it didn't have any REAL pumpkin in it.

So, I decided to tweak this recipe from LilaLoa.  And since you're replacing some of the butter with pumpkin puree, they're actually better for you, so now you can EAT ALL THE COOKIES!!  You're welcome ;P

This makes about 4 dozen average sized cookies.

1 stick of butter, softened
3/8 cup pumpkin puree (NOT pumpkin pie filling)
1 1/2 cups sugar
2 eggs
2 tsps vanilla
2 tsps pumpkin pie spice (I made my own from this recipe)
4 1/4- 4 1/2 cups of flour
3/4 tsp baking powder
3/4 tsp salt

Cream the butter and pumpkin puree together, then add in the sugar and beat till mixed well.  Add the eggs, then vanilla and pumpkin pie spice.  Make sure it's all mixed together well, then mix your baking powder and salt into the flour and add in gradually.  If it's still too sticky, add some more flour in.  Chill for a few minutes while you get your cookie sheets ready and the oven preheats.



See those little flecks of orange in there??  Actual pumpkin, my friend :D  And I love seeing all the flecks of spices in there.  Yum, y'all.  YUM.


This recipe is a little chewier than the original vanilla version because the pumpkin changes the texture a little bit.  But if you're looking for actual pumpkin spice flavor, these can't be beat.
